Anvil's Proton Full Size Convection Oven is especially designed for baking breads, muffins, baguettes, biscuits and more. It will also evenly reconstitute large quantities of frozen and chilled foods. It is also especially useful with parbaked products. Anvil's special air flow cooking system ensures that cooking times are reduced compared to ovens that do not have this system. It works because of the unique air movement created by the combined air flow of two convection fans coupled to a specially designed diffuser plate, ensuring a continous, even flow of hot air around the oven interior. As a result Anvil convection ovens are ideally suited for dough products, pastries and cakes.
The Proton also includes a steam injection system for manual humidity control which allows for browning of pastry and bread products. In addition, the oven is fitted with a custom designed baffle fan to ensure that excellent temperature distribution is achieved throughout, even when the oven is full to capacity, providing reliable baking uniformity.
